It might just be that the engine isn't working hard enough. The engine will never get very warm at idle unless you cover the radiator. Even running it at 1,000 RPM won't get it hot enough to open the thermostat.
Even with a heavy load mine doesn't get above 190 even pulling a hill on a warm...

You don't say whether you just need to release the brakes long enough to load the truck on a trailer, if you plan to flat tow it etc. What are you looking to do once you release the brakes?
If you intend to tow it, what are you towing it with and do you have tow bar feet sized for the truck...

To my knowledge the rear stabilizer leg was not a factory standard on most, if any, of the trailers. Every one I saw in 29 years was field installed. Some units didn't have any and some units had them on everything.

Also, if you have the panel for the rear of the trailer the rectangular brackets on the side skirts of the trailer are where you put that panel when not in use. It'll stay there without being tied down. I put mine on the driver's side so I can see it but it can go on either side.
