You've got a lot of extra weight being thrown in all directions with mud on everything. I'd give it a good pressure-washing before you worry about funky steering. I'd be willing to bet that everything will be back to normal once all the junk is off of it.
If you're feeling up to it, you could swap out those axles with some regular trailer axles from a good van trailer with the proper weight rating. You'd probably save a few pounds, gain a little ground clearance and I'd be willing to bet you could resell those driven axles and make enough profit...
Someone on here did a really simple install of a single-wire GM alternator with a piece of angle-iron and a flip of the existing generator arm. I'm looking into doing the same. Might want to search for 12 volt a little and see what comes up.
I think you should double-check on the ratings for that toy hauler. While I don't doubt that it may handle a pretty good load, I wonder if nearly 3000 lbs hanging over the rear of the axles will be too much for the frame? Crawl underneath a camper and take a look at the frame and you'll see...

You could just go for the Curt 14082 hitch. Drill 6 holes and you're set for up to 12K, and it doesn't sit down very far when not in use. A good drop plate & pintle/ball combo will set you back about $100-150 above the price of the hitch (I got mine for $145 new). Overall, not exactly...
When up to speed, if you've got enough strength to change gears, you probably have enough to swing her around.
It goes without saying that low speed is where steering strength is needed. Air-assist is good, but not optimal. I know I have a much easier time turning my wheels when air pressure...

Saturn surplus sells connecting rods for the Deuce; perhaps shot-peening them would net a stronger rod? You could see about replacing studs for the crank and such with ARP hardware.

I have something similar... The flasher works just fine, but I have to rest my hand on the lever or it just goes out. I think I may have to replace the lever -- no problems with bulbs or wires.
