I will drive through deep mud but will avoid it if at all possible. There's just too much cleaning and maintenance afterwards that kind of takes all the fun out of it.
A deuce will pull you out if it can tie off to something and you have a couple of snatch blocks. I've pulled out 5-tons stuck worse with my deuce and a 3-part line.
The rope trick will work also but you need much bigger rope or some wire rope (cable).

Gimpy is right. Roll those side windows up and open the windshield, you won't get any engine heat from the holes.
It's night and day difference as far as cab temp and will do more than you'll ever do trying to plug the holes.
I third the steam cleaner. I've got a old Hotsy steam cleaner and that thing will take off paint if you hold it too close. I do realize not everybody has one of these at their disposal though.

It also depends where the hoist is mounted. The farther back you mount it, the steeper angle it will dump, but the less force it will have. Hinge placement also plays a role in hoist capacity. Any bed hanging over past the hinges will help with hoist capacity.

I have no experience with the kit C&C sells but most electric pumps will put out as much pressure as any, they are just slow.
I've done several dump conversions, most of which can be found here with a search. I always go with a PTO setup as I don't like the slow speed of the electric pumps.
